It’s the little things, without them there would be no essence to everyday life. Without them there would be no Me. There would be no Us.  One of the three books I’m reading at the moment is a book written by Mark Nepo ”The Book of Awakening – Having the Life You want by Being Present to the Life You Have.” In one of the chapters Nepo writes that; ”One key to knowing joy is being easily pleased.” I find this to be very true. Sweet breakfast porridge

This is a deliciously sweet porridge recipe that satisfies every sweet tooth. Perfect as breakfast on New Years Eve or New Years Day. I’m a huge fan of nutella and porridge. They marry very well together. Feeding my soul. A simple recipe, yet extremely tasty. I recommend you to try it out ❤ Creamy steel cut oats with vegan nutella Ingredients: 1.5 dl gluten free steel cut oats 3 dl unsweetened almond milk 1 tbsp chia seeds Salt & cinnamon Topping: Vegan chocolate hazelnut spread, maple syrup & hemp seeds Instructions: Cook the oats in almond milk on low heat until creamy. Add chia seeds, salt & cinnamon. Eat with maple syrup, vegan nutella and hemp seeds.     

Vegan mac & cheese

This recipe is very easy to make, especially if you already have some sweet potato leftovers in the fridge and soaked cashews. I’ve been craving a really creamy pasta dish for a couple of days, and yesterday I saw a photo of a deliciously looking vegan mac & cheese recipe so I just had to make it. Oh my! A new favourite. I’ve never been a huge fan of pasta, but this was extremely satisfying. I cooked some gluten free pasta and combined it with the sauce, and topped it all with baby spinach and steamed broccoli. However, the lightning is terrible at the moment. Total darkness 24/7, so what to do. It tastes way better than it looks though, I promise. Invite your friends over for a pasta evening. Comfort food at its best. Green Super Smoothie

‘Happiness is sipping a green smoothie.’   This green goddess smoothie will provide you with pure healthy energy, and make you glow from the inside out. It’s filled with all the good stuff; spinach, kale, broccoli, mango, banana and almond butter. A bunch of greens, because the body likes that. Every cell of the body likes those nutrients.  Nowadays when I have a smoothie they are usually green and filled with veggies & banana or mango. They keep me fuller for longer, and are perfect for both breakfast or as a post-workout snack or as a lighter lunch. It’s easy to ”hide” the veggies in a smoothie. If your kids or you have difficulties getting those daily portions of veggies blend them into the smoothie. My favourite drink this season ❤ Golden mylk Ingredients: Plant-based milk Turmeric Cinnamon Vanilla powder Black pepper Coconut oil Raw honey + sprinkle some love on top Instructions: Gently heat the milk in a pot on medium heat. Add the spices and whisk until blended. Pour into a mug and add a teaspoon of raw honey. Enjoy with a couple of pieces of dark, vegan chocolate.

Kale Smoothie

‘Don’t let the colour fool you. A green smoothie a day and you’ll become Wonder Woman.’   Linda I got the chance to make this lovely green smoothie today, just before my blender decided it was time to say goodbye. Oh well, we have had good times, many delicious and nutritious smoothies she have made. The taste is very ‘green garden’, but the banana gives a nice sweetness to it. Try adding almond butter in your kale smoothies. The perfect combination. A green smoothie a day keeps the doctor away.  Kale made me do it Ingredients: A handful kale A handful baby spinach 1 frozen banana 1 tbsp almond butter Plant-based milk 1 tsp chlorella powder Vanilla powder Instructions: Mix the ingredients in your blender until creamy. Pour into a bowl & decorate with granola, berries or nuts.  

5 benefits from drinking green smoothies

‘Let’s wake up with a smile, make green smoothies and conquer the day.’   Whenever I’m at home I try to have a green smoothie as the first meal of the day. I’ve become slightly addicted to them as they provide me with so much energy. And of course they taste delicious. However, I like my green smoothies to be more on the sweet side, hence I always mix frozen banana or frozen mango into the blender. Not to forget the almond butter or peanut butter. The best thing is – you can be creative and improvise. Combine your favourite veggies and/or fruits, some kind of superfood and spices, nuts & seeds, dairy free milk of your own choice and you have yourself a delicious meal.
