Day Trip & Own Creation

‘psithurism  (noun) = the sound of the wind through trees.’   It was a cold and crisp November’s day when I got the most spontaneous idea to go to Sigtuna, a small and cosy town approx. 2 hours from Stockholm. Or actually, the idea came during my morning meditation. I had this voice inside my head; ‘You have to go to the cosy little town outside Stockholm that your friend keeps talking about all the time.’ I did not remember the name of this cosy, little town though. But thank you Google. I was very pleased because my friend Emelie had a day off and was happy to join. We strolled around, trying to keep ourselves warm, had lunch at the main hotel in town and enjoyed a beautiful sunset by the water. Nature and stillness – and the brain is intact again.   I received my book in the mailbox today! I have to proof read it first, and then I might order some more copies so I can give to friends and family. …

Pumpkins & Halloween

‘By the pricking of my thumbs, something wicked this way comes.’ – William Shakespeare, Macbeth   Is fall my new favourite season? It might well be. However, I do still love summer, but autumn… I believe you stepped up your game. Halloween & pumpkins – Let the festivities begin! And how can one not fall in love with October? Dark nights, colourful days, fuzzy socks, books, creative writing, candle lights, spicy soups, a sky full of stars, cosy sweaters and ice cold fingers. If I only had a dog. A sunny weekend in Vienna

‘Autumn killed the summer with the softest kiss.’ _____________ d.j. Hello from beautiful and sunny Vienna. I’m visiting my childhood friend Anna for the weekend and we’ve been enjoying a couple of lovely autumn days here in Austrias capital city. It’s my first time in this gorgeous city, and I really like the atmosphere – all the beautiful buildings, the architecture, the market places, and of course, the Wiener Melange – a speciality coffee drink similar to cappuccino. Not to forget all the traditional Wiener cafés. We’ve been eating delicious vegan food (which is by the way very easy to find), strolling around the city, drinking coffee and enjoying apfelstrudeln, visiting Schönbrunn, and yesterday we visited the art museum Belvedere. I’m flying home tomorrow so still one day left to explore. Below you find a mix of pictures from the past days. The sun has been shining the entire weekend. Just lovely. Liebe Gruesse aus Wien ❤

5 THINGS I LIKE ABOUT FALL

Early morning the sun comes out, his soul returns and she’s gone.’ ______________ Linda   The tranquility that suddenly appears. A sense of calmness arrives when the evenings get darker. Candle lights are burning inside while the nature is changing its colours. Heavier rains, stronger, brisk winds and a mind at ease. Heart-warming soups & spicy veggie stews. Even though I love a creamy smoothie bowl my body is longing for warm, flavourful foods when the days get colder. How wonderful isn’t it to cuddle up with a spicy dish after an hour walk breathing in the cool, crisp air. Nature at its finest. I’m definitely a summer person, but I have come to appreciate the fall more and more. Especially September. The colours of the trees, the fresh air and cooler nights. However, cleaneatingbylinda.com will still be the blog URL (at least for the time being). I’m still CleanEatingbyLinda though; I simply view the name change just as it is – a name change or more or less – Health Food & Other Stories by cleaneatingbylinda. While CleanEatingbyLinda is the brand name, Health Food & Other Stories is the blog name. 5 X favourites

‘Find the beauty in everyday.’   My 5 favourites at the moment: Turmeric – I’m obsessed with this anti inflammatory spice. I usually mix it with warm almond milk, cinnamon, black pepper, honey and coconut oil. I try to enjoy at least one cup a day. So heartwarming and comforting. Plyometrics – I’m all about those short & sweet intensive workouts; body weight plyometric exercises or interval training on the treadmill for both strength and speed. Box jumps, squat jumps, jumping lunges, burpees to mention a few exercises. Mádara skin care products – I found a new organic skin care brand and I’m in love. Their products are awesome and cruelty free. One of my favourite products is the Radiant Energy Organic Facial oil. It’s a radiance-boosting concentrate of 9 rare and precious dry oils. I’m especially intrigued by the enormous power and impact food has over the human mind and body. We can either become addicted to certain foods, we might use food as a stimuli; for example we might turn to food when we’re bored, when we’re sad, when we’re stressed OR food can have a positive impact on our health and thereby help to prevent many chronic diseases, such as type 2 diabetes, cancer, obesity, cardiovascular disease, depression, to mention a few.  Eating healthy is a form of self-respect Awareness is key when it comes to a healthy mindset and a healthy body. As well as the importance of making better choices. Healthier choices. No one is perfect, and of course one is entitled to indulge every now and then (what would life be without indulgence!?) My thoughts on plant based eating

”Don’t forget: We all thrive on different foods. And healthy looks different on every body.”   In the end of December 2015 I switched to a vegetarian diet. Transferring to a vegetarian diet wasn’t that big of a deal since I haven’t had red meat or pork in approximately 16 years. I guess the main reason was my body started craving more and more vegetables and plant based foods. However, I was still eating dairy in form of goat cheese and halloumi. After a month I decided to quit all dairy products, since I’m anyhow intolerant to cow milk. At first I thought (or wished) my stomach could digest goat milk better than cow milk, but in fact it doesn’t. Imagine the struggles since halloumi was one of my favourite foods! However, quitting dairy has improved my skin, stomach and throat(?!) While eating cheese and dairy I usually suffered from skin rashes, stomach cramps and infections in my tonsils. My plant based kitchen

Food staples for a plant based diet I’ve been eating a more plant based diet for almost a month now. However, there hasn’t been any drastic changes regarding my food habits. Or it depends how you look at it. As being a person that is used to eating almost four eggs per day, halloumi and goats cheese every second day and a chocolate protein bar every now and then… Then of course there’s been some minor changes 😉 At first I thought it would be difficult to be without both egg and goats cheese but it’s funny how quickly your body gets used to a new habit. I think I read some where that it takes approximately 14 days for a person introducing a new habit. I strongly believe it depends on the person – for one person it might take three days whilst for another up to several months. It’s important when changing a habit that you give yourself room to fall back to old habits and not being too harsh on yourself if that happens. These …

Meat free January

I’ve decided to enjoy a meat free/vegetarian January. I haven’t been eating red meat and pork in a very long time, I think it’s probably 15 years since I had a piece of meat. However I’ve been eating plenty of chicken and fish. Whereas I’m sensitive to dairy it won’t be any bigger problem leaving that out. Goat cheese is still okey for me (in moderation), which I’m rather happy about since I love halloumi. Anyhow during this meat free month I will continue eating organic eggs, but less than before. I’m used to eating approximately three to four eggs per day. Hopefully in a couple of weeks I’m down to eating three to four eggs per week. One reason why I decided to stay away from chicken and fish is that I want to eat more plant based and thereby focus more on veggies and greens.
